Sick of Salad Stir-Fry

If salad greens and vegetables are either A) Going bad or B)You're sick and tired of eating them... here is my favorite solution to both of these problems. 

  Stir Fry can also be a quick and easy meal when you're running low on time.


  • 1 tbsp Olive Oil
  • 2-3 tbsp soy sauce
  • 1 cup of cooked rice (your choice- I prefer either Brown or Jasmine for stir-fries)
Save On Time option: Microwaveable rice packets

  • 1 bag of salad greens/spinach/kale
  • 1 cup of mushrooms
  • 1 cup shredded carrots
  •  1 can artichoke hearts
  • Any other leftover vegetables you need to eat - some tasty suggestions include baby corn, pea pods, water chestnuts, bok choy, pepper, summer squash, zucchini
  • 1 cup of mixed nuts/almonds/ or peanuts 

  1. Heat Olive Oil in skillet on Medium Heat for 2 minutes
  2. Add carrots, stir for 2 minutes
  3. Begin to add mushrooms, artichoke, and other vegetables. Stir and allow to cook until begin to soften
  4. Add salad greens. These should cook quickly
  5. Reduce heat to low. Add rice
  6. Continue stirring, add soy sauce for taste
  7. Remove dish from heat. Add mixed nuts/peanuts/almonds  on top
