Skip the Soup and Salad -

To keep weight off, I find that keeping to salad and soups can get a little bland.

To keep lunchtime interesting, I like to keep cooked Long Grain and Wild (full of Vitamins B, Iron and Magnesium) rice in the fridge.

With a glass of iced green tea on the side, I like to enjoy a 1/2 cup rice, 1 whole cup of mixed vegetables (frozen brands are best- they keep the nutrient locked in for longer, not to mention they're easier to store and cook). To add healthy fats, a handful of almonds and dried cranberries for antioxidants create the perfect meal.

Delicious, filling and done in less than 5 minutes.
