Spinach and Mushroom Enchiladas!








Note - you can definitely add in lean, ground turkey or chicken into this dish. I chose to keep it vegetarian, but simply heat up your favorite lea, ground protein on the stove top on medium-high heat until no longer pink and mix in with Enchilada veggie mixture.



To make this recipe, which creates 4 servings with at only 250 calories each (without meat!) , you will need:





Begin by combining two 10 ounce frozen or fresh packages of frozen spinach, thawed ,  and 2 cups of sliced mushrooms, with  a 15 ounce can of drained and rinsed pinto beans in large skillet.







Sprinkle 2 teaspoons of chili powder and 2 teaspoons of red pepper flakes, and stir occassionally for 5 minutes.



Combine one 8 ounce can of Organic tomato sauce (or enchilada sauce) with 2 tablespoons of water, and 1/2 teaspoon pepper sauce into a seperate skillet.

Taking 4-5 whole wheat tortilla flats, dip each wrap into sauce mixture and stack them on a seperate plate.



Spoon a quarter of your vegetable filling (meat can be added, if you want!) oito the center of each tortilla. Roll tortillas up carefully, folding ends inside, and place in a Pyrex dish.








Once all tortillas are aligned in dish, drip whatever is left of your tomato sauce over enchiladas. Sprinkle cheese over enchiladas - I love the dairy free Go Veggie! cheese mix.



Bake in the oven for 425 degrees for 15-20 minutes. Check to make sure the ends don't get too hard!
