Comfort Food Cooking

Soup Prep
For a warm meal and great taste, all you need is chicken, barley, and mushrooms. Add some vegetable broth, a medium chopped onion, and vegetables of your choice - I recommend carrots, peas and corn - and you're all set for a warm meal you can get cozy with.

Depending on how thick you'd like this stew to be, add more broth to thin your meal into a soup consistency. Otherwise, add only 5 cups of reduced-sodium vegetable broth, along with a pound of baby carrots, 16 ounces of mixed frozen vegetables, and 1 cup of wild mushrooms. Stir in 1 cup of dry barley (pictured right) and 1 pound of thawed, thin cut chicken breast. (Note: Chicken cooks best when placed on bottom of the slow cooker).

For flavor, add a teaspoon of black pepper, 1/2 teaspoon of thyme, and 1 chopped clove of garlic. Cover and cook on LOW setting for 7 hours.  This recipe makes 5 servings, and has only 240 calories per serving.

To save time, prepare vegetables the night before and store in plastic containers in the fridge
