Turkey and Sweet Potato Quinoa


Here's a delicious way to get some nutrient-packed veggies into your meals
Begin with a medium saucepan over Medium-High heat, and combine 1 cup of water with 1/2 cup of Quinoa. Bring to a boil, and reduce heat to Medium. Let sit for 15 minutes for all water to be absorbed by the grains.

While Quinoa is simmering, have 2 medium sweet potatoes, peeled and cut into small cubes, in a small saucepan with water. Bring to a Boil, and cook until Potatoes are tender enough to be pierced smoothly with a fork. Drain water.

In a seperate, large frying pan, heat 2 teaspoons of olive oil on Medium-High heat. Add 1 pound of lean ground turkey and stir occassionally until the pink color is gone. Remove Turkey and set aside on a dish.

Keep frying pan on Medium-High heat and add an additional 2 teaspoons of olive oil. Stir in 1 medium, chopped onion and stir for only one minute. Add 1 medium, chopped red bell pepper, 1 clove of minced garlic, and 1 teaspoon of ground cumin. Stir until peppers begin to soften.

Stir in 1 cup of frozen peas and turkey meat, stirring for about 2 minutes. Add the Quinoa and Sweet Potato, and continue stirring for an additional 2 minutes until mixed well and warm.

Serve with Black Pepper.

This meal yields 4 servings,
with only 290 calories per serving.

Red Meat Option:
Note- You can substitute ground turkey for a lean cut of Steak, cut into small cubes, and alternate the Yellow Onion for a Medium Red Onion.
