Pesto Chicken over Snow Peas and Quinoa






If you love pesto as much as I do, you are going to LOVE this recipe! Using quinoa, which is a gluten-free protein source that absorbs the flavor of whatever you cook it with, this dinner is simple and quick for a weekday meal.

This recipe makes 4 servings, each with only 370 calories. 
    
      Begin with 3/4 cup of quinoa, rinsed, in a saucepan with 1 1/3 cup water on High heat. Bring to a boil, then reduce heat to Low and cover. Allow to sit for 15 minutes, until water is completely absorbed. 

   Meanwhile, heat 1-2 tbsp of Olive Oil on medium heat in a large frying pan. Add 2 cloves of minced garlic, stirring occasionally until garlic turns light brown. Add 1 pound of lean chicken breast, cut into small portions, and stir often for 3-5 minutes. 



   When chicken is cooked through, the center is white, stir in 8 ounces of fresh snow peas and reduce heat slightly for 2 minutes. Add 1/4 cup of pesto and stir frequently for an even distribution. 

   Remove from heat and serve over quinoa, mixing in well.
