Panzanella Salad - Make Gourmet Italian Right at Home








Lately, I've been getting into my George Foreman grill.

 No- this is not a plug. It honestly is a great little cooker that is inexpensive, time saving, and healthy. I use it most weeknights to grill turkey burgers, chicken, fish, quasedillas and even vegetables. 


So, why am I talking about a grill when this recipe is for salad? Because, to make an Italian Panzanella salad at home you will need to have pre-cooked chicken and homemade grilled pita bread. 

In 6 minutes your chicken can be grilled using no oils or fancy cooking methods. It's pretty much pain free.

To prepare your homemade pita chips, lightly coat both sides of a whole-wheat pita pocket with olive oil and bake on 400 degrees for 10 minutes. 

Panzanella is a Florentine word for a popular summer-time salad made with tomatoes, onion, vinegar and bread.  To make your own Tuscan salad, have 1 cup of diced, cooked skinless chicken breast and your homemade pita pocket, torn into small pieces, and place aside. 


In a large salad bowl, mix 4 cups of shredded romaine lettuce with 1 medium, 1 sliced yellow pepper, 1 sliced red pepper, 1 sliced cucumber and 1/2 red onion. Add mushrooms if desired. Chop 3 medium plum tomatoes and toss well.


Layer with prepared chicken and pita bread.





For a low calorie dressing, whisk in a small bowl the following: 2 tablespoons lemon juice, 1 tablespoon white vinegar, 1/4 teaspoon of sugar, 1/4 teaspoon Dijon mustard, and 2 tablespoons of Olive Oil. Sprinkle black pepper and pour over salad.
