Quick and Light Goat Cheese Quesadillas

Hungry? Got 15 minutes? Gather a few basic ingredients and make yourself a chicken quesadillas with more flavor and less fat. Using 4 whole-wheat pita pockets, goat cheese, lean chicken breast and some veggies you can easily cook this meal, making 4 servings, and enjoy at only 315 calories per serving.

Begin with heating 1 tablespoon of exrtra virgin olive oil in a skillet on medium-high heat. Add 1/4 of a chopped white onion, and cook until softens. Stir in 1/2 chopped red and 1/2 chopped green pepper, continue stirring for 2 minutes. Add in 1/2 cup of thawed frozen corn and 1/2 cup mushrooms. Continue sauteing for 2 more minutes until all vegetables soften.

Stir in 1 cup of pre-cooked, skinless chicken breast. Stir for 2-3 minutes, then remove pan from heat.

Carefully slice open 4 whole-wheat pita pockets and smooth over 1/2 ounce of goat cheese on each. Sprinkle shredded cheddar cheese (or any Mexican shredded cheese mix.) Fill each pita with chicken and vegetable-sauteed mixture.

On a medium sized skillet, warm your quesadillas on medium-high heat for 5 minutes, making sure to heat both sides equally.
