Very Veggie Barley Mix




Very Veggie Barley Mix is a great side-dish or afternoon snack. Added serving suggestions include mixed nuts, sliced almonds or 2 teaspoons of soy sauce.
Only 1 gram of fat and 150 calories per serving!
(This recipe makes for 4 servings)

To make this recipe, start with:


  • 2/3 cup uncooked Barley- do not use quick cooking brands


  • 1/4 cup vegetable broth, then 2 cups vegetable broth kept seperate


  • 4 cups frozen mixed vegetables of your choice (2 packages in grocery stores)


  • 1/2 teaspoon minced garlic


  • 1/4 teaspoon black pepper
Here's the steps:


  1. Preheat oven to 350*, prep baking dish with nonstick cooking spray


  2. Place barley and 1/4 cup vegetable broth in large skillet, cooking over medium heat until barley is lightly browned. Stir frequently. Pour into baking dish


  3. Add vegetables, garlic, black pepper and 2 cups of vegetable broth to baking dish, mixing well


  4. Cover with foil tightly and bake for 50-60 minutes, until barley is tender and most of the broth is absorbed.
