Healthy and Easy Minestrone Soup!

For a warm, tasty alternative to salads this week try making Kickstart's Easy and Healthy Minestrone Soup. This recipe is around 100 calories a cup, and is packed with protein, vegetables and flavor that you can easily modify to fit your taste. The recipe I provide here makes for up to 10 servings - I make one big batch at the beginning of the week, and have it for lunch everyday at work.
