Indian Style Chicken







This chicken dish is full of flavor using only a few key seasonings and spices. Paired with a healthy Wild Rice Mix, this makes for an exotic dinner full of flavor. This recipe makes 4 servings, and about 400 calories per serving









Start with a medium sized bowl, and combine 1/2 teaspoon salt,1/2 teaspoon black pepper,1/2 teaspoon ground cumin (substitutes: Oregano or Coriander),1/2 teaspoon ground cinnamon (sub.s: Cloves or Nutmeg),1/2 teaspoon ground turmeric (sub.s: Dry Mustard or Ginger or Saffron)

  Rub mixture on 1 pound of raw, lean chicken breasts evenly, and let sit in bowl.
Chill in fridge for 15 minutes


Meanwhile, preheat oven to 350*, and lightly spray a Pyrex dish with EVOO (Extra Virgin Olive Oil).  Put aside for chicken.


Heat 1 tablespoon of olive oil in a large skillet on medium-high heat. Add chicken, cooking until lightly browned. Make sure chicken is thoroughly cooked, and no longer pink in the center!

Remove from heat, setting on a separate plate.


Add 1/2 pound baby carrots, sliced (or 2 whole carrots sliced),1 red pepper, chopped and 2 cloves of minced garlic to skillet, stirring for 2 minutes. 

Add 1/2 cup of rice (pre-cooked) and stir frequently for 4-5 minutes.



Add 2 cups of reduced sodium chicken broth (or vegetable broth  to skillet. Bring to a boil over high heat, stirring frequently.






Remove from heat and pour into baking dish. Stir in 1 cup of raisins and 1/2 cup of unsalted almonds. 

 Serve chicken on top.



Cover dish tightly with foil, and bake for 35 minutes.
