Lean Turkey Meatballs

Clean eating centers around getting in lean protein sources with lots of vegetables and healthy, complex carb sources. 

While some  people are satisfied with having grilled chicken and steamed broccoli most days, it's fun to add some variety to a healthy meal combination.

The idea for Turkey Meatballs comes from Jamie Eason's Turkey Muffins (you cook basically the same recipe for the meat, but add in a few different seasonings, nix the oats and bake in a muffin tin for portion control). And while I enjoy Jamie's turkey muffins, the clean up was starting to get to be too much for me.

Thus, the necessity for saving time and energy (because between work and the gym, who has it?), I created some fast, easy and delicious meals that fit my clean eating regimen.

Serve as Meatballs with Spaghetti Squash

To make your meatballs, begin with 2 pounds of lean ground chicken or turkey - whichever you like better. Chicken tends to be a little cheaper, so I usually go with chicken. Combine in a large bowl with 3 egg whites. Add in 2 teaspoons of Thyme (seriously, the most important ingredient in my opinion- Thyme makes chicken and turkey taste AMAZING), 2 teaspoons of ground black pepper, 2 teaspoons of basil, oregano and 1 teaspoon of garlic powder.

Next, slice up 1/2 white onion into small pieces and 1 small red and green pepper- Some people like celery, which tastes great as well. Mix everything together in the bowl for a few minutes until well incorporated. Have oven pre-heated to 375 degrees.

Prepare a large, flat baking pan by covering with aluminum foil. Spray lightly with Extra Virgin Olive Oil cooking spray. Create small, round balls about 2 inches in diameter and place them 1 inch apart. Bake for 40 minutes.
