Grilled Chicken and Veggie Kebabs







It's Summer Time- time for the beach, cold drinks, and grilling. To keep your clean eating diet and fitness goals in check this summer, it's important to keep eating meals that incorporate lean protein and lots of veggies.


Chicken Kebabs can be an easy answer- not only are they fun to make and delicious, but you can be creative with what you put into them. This meal is easy to adjust according to your preferences in vegetables. 

I made mine with grilled chicken, but you can easily make any kebab with steak or salmon. 

The marinade I used is adapted from Clean Eating's magazine for July 2012.






Begin the previous day with your marinade. In a Pyrex dish, chop 2 pounds of lean chicken breasts into 1 inch pieces, mixing in with 1 tablespoon of EVOO, 2 tablespoons of chopped garlic cloves, 2 tablespoons of Thyme or Rosemary, 1 tablespoon of low-sodium soy sauce (or Bragg's Organic Liquid Aminos) and 1 teaspoon of ground black pepper. If you're cooking red meat, add in 1 tablespoon of red wine vinegar.
Chill in the fridge overnight.



The next day, prepare vegetables of your choice to grill. I included 2 zucchini, 3 small yellow squash, 2 red and 2 green peppers, 1/2 red onion, and 1/2 pint of mushrooms.   




Chop vegetables into 1 inch pieces (you won't have to chop the mushrooms if they're pre-sliced, and will easily break on skewers if you use thin pieces). Thread meat and vegetable pieces onto skewers, alternating for color and variety. 






When completed, grill for 8-10 minutes, turning once halfway through. Remove from heat, and allow a few minutes to cool.
