Pesto Noodles







I seem to be on a Shirataki noodle bend right now.
They really are a neat food - filling, can be cooked with almost anything, easy to prepare, and they're made from yam flour with zero calories. Pretty neat food if you ask me.

So, I've been experimenting with them. Trying out Peanut Butter to make a clean eating Thai Peanut Noodles that is pretty tasty. Sometimes I just eat them plain with veggies and ground turkey, sometimes I've added homemade pasta sauce, and another favorite is fat free feta cheese which is pretty awesome, too. They all taste great because Shirataki noodles take on the flavor of whatever you mix them with.

My latest favorite coupling is Shirataki noodles with basil pesto. I don't know how to make my own pesto, but I love the flavor- so I mix in 1-2 tablespoons (about 120 calories, depending on the brand) with the noodles after I've warmed them. Top with lean chicken, steamed broccoli, sliced cherry tomatoes, and we're in business.

A pretty simple little dish, but still - I thought it may be worth sharing. I'll be happy if just one person out there tries this meal after reading this, and enjoys it as much as I did :)
