Spinach Mushroom Chicken Bites

Here's a clean and quick idea for mid-afternoon snack, or as a lean protein option.

These are ridiculously simple to make, and taste great.
Start by pre-heating your oven to 375 degrees. Combine in a medium-sized bowl 2 pounds of lean ground chicken with 1/2 cup of liquid egg whites, 1 chopped medium-sized onion, 1 small package of frozen spinach, and 1/2 pint of fresh mushrooms.

For seasonings- mix in 1 teaspoon of Thyme, 1 teaspoon ground black Pepper, 1 teaspoon each of basil, oregano, cayenne pepper, and 2 teaspoons of garlic powder. Mix all ingredients well by hand.

Lay out a large, flat baking sheet with aluminum foil. Create tennis-ball sized chicken bites, or even smaller if you wish, and stagger along the pan. Place in oven for 40 minutes.

That's it! - Super easy, and incredibly yummy. I enjoy these for lunch or mid-afternoon snack with baked sweet potato or fresh salad.
