Clean Asian Chicken and Pea Pods




 



Chicken is a common staple for fitness and health minded people, but it can get boring pretty fast.



In the search for a unique marinade that is low in calories and adds no unnecessary fat, try this Asian inspired twist:

 
Prepare 1 pound lean chicken breast by marinading with 1 clove garlic, 1 tbsp low sodium soy sauce ( I like Bragg's Liquid Aminos), 1 tbsp Extra Virgin Olive Oil, 1 teaspoon each of cumin and coriander. Saturate chicken and set in fridge for 5-6 hours. To cook, grill 4-5 minutes each side until center is no longer pink.





You can serve chicken with grilled or steamed veggies, but if you want to try an Asian Noodle dish:





 Boil 1 pound gluten-free, brown rice spaghetti pasta. While cooking, in a separate pan, saute 2 teaspoons red pepper flakes (more if you like spicy!) with 4 tbsp sesame oil, 4 tbsp low sodium soy sauce, 6 tbsp honey. Allow red pepper to warm on medium heat for 5 minutes.

Stir in a handful of scallions or chives, pea pods or sugar snap peas (as much as you'd like!) and 1/2 pint sliced mushrooms (or, as much as you'd like!).

Warm until vegetables soften (about 10 minutes), remove from heat and cover for another 10 minutes, stirring occasionally.

Serve warm with 1/2 cup unsalted peanuts mixed in.
