Clean Garlic Chicken and Cauliflower Pizza

You've probably heard about clean pizza, or "no carb" pizza, 
or whatever-you-want-to-call-it pizza.

I admit, and I could tell by the response from my Facebook post of this picture, that the thought of cauliflower pizza was kind of a strange idea. It sounded both gross and too healthy (is there such a thing?)....

 I never found the impulse to make it. Until I was having a healthy friend come over for pizza - who had a recipe for Clean Eating Pizza. I figured, I now had an excuse to make this meal- and if it was terrible, I could throw it out and just call in delivery.




I did tweak a few ingredients and directions, but I am going to say that this meal is surprisingly, AMAZINGLY good- I wouldn't post it if it was terrible. My friend and I devoured almost the entire thing - and even the guys liked it! I will note, however, I am a big lover of garlic- and added quite a bit (that probably helped).

If you wish to try this out for yourself, I recommend getting 2 frozen bags of cauliflower- many recipes say get a fresh cauliflower head, mash it, etc...but I find that to be way too time consuming and difficult. I like to keep things simple.

Defrost your cauliflower however you choose, and place in a large mixing bowl. Mix in 2-3 eggwhites, 1 cup of cheese (I found a lactose-free shredded brand with no fat made by Go Veggie!), and minced garlic (powder is fine, too). Add in spices - Oregano, pepper, crushed red pepper, more garlic...



Spread out thinly on a baking pan that has been sprayed with EVOO (extra virgin olive oil) cooking spray. Be sure to spread thinly or else you will have a very wet center that won't cook well. Bake crust in oven at 450 degrees for 15 minutes.

 

Remove, and add sauce- I love Muir Glen's Organic Tomato sauce, and will mix in oregano, parsley (a dash), garlic (too much?). Top with leftover shredded cheese, grilled lean chicken breasts cut into small pieces, and your favorite veggies, raw- (I did olives, artichoke hearts, mushrooms, and tomato slices).



Put back into oven for 5 minutes - remove and Enjoy!
