Garlic and Chive Mashed Cauliflower

I have been meaning to make this for a while. And if you haven't tried mashed cauliflower yet, definitely don't knock it. It's actually pretty good- dangerously, addicting-ly good.

And easy to make.

Now, I'm a big believer in frozen caulfilower to make this- it's much faster to boil and break down. If you like raw cauliflower head, that's fine as well. It requries a little more work, however. 

If you choose to go raw - strip the cauliflower head (one is fine) and chop up into manageable pieces. Add into boiling water for 25-30 minutes (until you can easily poke a fork through.) - A vegetable steamer works well, too!

Whether you use raw or frozen cauliflower, once it has boiled (frozen should only take about 10 minutes or so- about 2 bags of frozen works great for 4 people) - drain with a colander. You can leave a little bit of water, but not too much.

Place back in the pot with the heat turned off on your stove top. Mash cauliflower until smooth, and add in a dash or two of almond (or non-fat) milk. (Plain Greek Yogurt works just as well- use about 1/4 cup!)

Next, I added in 1 tablespoon of diced chive, 1 tablespoon of minced garlic (I like garlic...you can hold back if you're not as excited about it as I am), and some black pepper to taste. Mix in 1/2 cup of shredded Parmesan or Mozzarella cheese - I use Go Veggie's Dairy Free, Vegan cheese on mine- tastes delish!

Mix well until you get a smooth texture,  and enjoy!
