Lean, Clean Quesadillas


Feel like Mexican food? Grab yourself a whole grain tortilla (Ezekiel's Bread for Life is perfect) or any of your favorite brands, and get the grill ready. This easy recipe takes only 15 minutes to make and is very filling.
Set your stove top to medium-high heat, and spray a little EVOO (extra virgin olive oil) on a grill or frying pan.
 Hint: If you want to avoid using cooking oils, a little trick I've found is using frozen, pre-sliced vegetables instead. Add a little bit of water, and it cooks just as nicely as oil.
Wash and chop up your fresh red and green bell peppers- one whole of each- with 1/2 sweet onion. Saute on the stovetop until soft, or you can use the water method mentioned above.

Stir in 1 pound of extra lean Angus ground beef, until there is no pink. Add 2 tablespoons of low sodium soy sauce - Bragg's Liquid Aminos works great.  Sprinkle 1 tablespoon of ground black pepper and 1 teaspoon of cumin.

Once meat is thoroughly cooked, scoop out a couple of large spoonfuls into one tortilla wrap. Fold tortilla with meat mixture inside, and grill on medium heat for 60 seconds.
(If you wish to add any cheese, there are many fat free/lactose free brands available. Other great, clean options include goat cheese or fat free feta) .

On the side, serve with salsa - homemade is great, but I love Green Mountain Gringo's Salsa - organic, decently priced, and tastes just like homemade.
