No Bake Protein Energy Bites - Chocolate, Cranberry and Flax

A quick healthy snack doesn't always have to come in a package. To make a healthy, on the go snack that requires no cooking skills, I made these filling protein balls.

You can play with the additives, but I personally love the chocolate and cranberry mix.

This recipe will yield 12 protein balls, with 150 calories each

Begin with a large mixing bowl ~ Stir in 1 cup of quick cooking oats, 1/2 cup of carob chocolate chips,  1/2 cup dried cranberries, 1/2 cup of natural (I love chunky!) Peanut Butter, 1/2 cup ground flaxseed, 1/3 cup of honey, 1 teaspoon of vanilla. Mix with a wooden spoon, slowly adding in 1/2 cup of water until you reach the desired consistency.

Optional ~ You can add in 4 scoops of chocolate protein powder. I didn't use it this time, but I will try it in my next batch.

Once well incorporated, line a muffin tin with paper cups. This will make them much easier to portion out and grab when you're in a hurry or packing for work/travel. Grab small handfuls and divide the mixture into 12 portions.

Be sure to cover and store these in the fridge - they will stay fresh longer and retain their shape and flavor.
