Personal Portabella Pizzas

Here's a new dinner favorite for you to try- the prep time is about 20 minutes, and these pizzas are low in fat, carbs, and taste awesome. I went for a more "Mediterranean" taste - but I would highly recommend adding in chicken next time. 

Note, this is a variation on Portabella Pizza from Bodyrocktv, but they have since taken down their recipe so I had to recreate one of my own. Hope you enjoy : ) 



 


Begin with removing the stems from 4 large portabella mushrooms. Sprinkle 1/2 tablespoon of minced garlic (to taste) on each cap, and generously spread your favorite Organic tomato sauce (or pesto!) over each. Dice up 4-5 plum tomatoes, and spread on top as well. 

On the side, prepare your favorite veggie toppings - Like I said before, I was going for a more Mediterranean taste, so I chose rinsed artichoke hearts and diced them up into smaller pieces, with rinsed black olive slices, 1/4 red onion and 1/2 orange pepper





Finally - add your cheese of choice. I originally did 2 pizzas with mozzarella balls (just 3-4 on each) and 2 pizzas with fat free feta, just to try out some different flavors. Sprinkle on top garlic and oregano seasonings - and a pinch of parsley to taste. 


Have your oven pre-heated to 425 degrees, and place on a aluminum foil covered pan for 12-13 minutes. 






How easy is that? And each pizza is only 80 calories each.
