Yummy Yogurt Granola Bites - No Bake!

protein energy no bake energy bites clean eating

These are so easy and quick to make- and serve as a great on-the-go mid-day or post-workout snack! They are high in protein, clean carbs and taste great.
This recipe yields 14-16 servings, with 200 calories each.

In a large bowl,  mix 1 cup of natural Peanut Butter (I love Chunky PB, but creamy works just as well), with 1/2 cup of honey, 1/2 cup of non-fat Plain Greek Yogurt, 2 cups of dry quick cooking oats, 1 cup of carob chocolate chips, 1 cup dried cranberries, and 1/2 cup of sliced coconut. Seriously, try not to lick the bowl or spoon while making this....

Mix well with a wooden spoon. In a separate tray, place wax paper down. Roll your granola mixture into handfuls (I made mine a little larger than golf ball size), and place on wax paper. Try to make sure they barely touch.

Cover, place in fridge and wait at least 1 hour- pressed for time? Throw in the freezer for 20-30 minutes. I got excited and just ate one warm.... they're a little bit easier to handle and much firmer when you wait for them to chill in the fridge.
