Black Bean and Sweet Potato Turkey Burgers

Here's a new healthy twist on the turkey burger

you have to try.

If you're not a big fan of turkey burgers, you may be now, because these are out of this world-  DELICIOUS. 

You may want to try these out with my new favorite French Frie alternative - Kohlrabi Fries! They are absolutely fantastic and taste like the real thing. 

Start  with 2 pounds of extra lean ground turkey. Place in a large bowl with the following seasonings: 1 teaspoon garlic powder, oregano and ground black pepper with 2 teaspoons each of onion powder and basil. 

Mix well by hand. 

In a separate bowl, grate one large, whole sweet potato. Skin is optional - I left mine on. Just be sure to wash thoroughly if you do, too!

Next, take one can of 16 ounces reduced sodium black beans (You can use your own dry black beans, be sure to rinse and soak overnight if you choose to do so). Rinse your canned black beans well, no need to pat dry- leave them a little wet! The moisture will help because ground turkey tends to be very dry. 

Add your sweet potato shavings and rinsed black beans in with your ground turkey. Mix together well so ingredients are well distributed. 

Turn your oven on to HIGH setting for Broil. Move a rack to the top most setting. 

On a large cookie sheet, cover with aluminum foil, and make palm-sized turkey patties that are no thicker than an inch in diameter. You should get about 10-12 good sized turkey burgers out of 2 pounds of ground meat. I recommend putting 6 burgers on a sheet at a time- make sure they don't touch!

Place your baking sheet on the top shelf for 7 minutes. Remove, and carefully flip each patty over. Put back in oven for an additional 7 minutes for bottom half to cook. 

Remove from heat, and try to resist eating them until cooled.
