Sweet Potato and Zucchini Chips

Need an easy to make snack that is healthy and filling? 

Try making your own homemade chips- and eat them with your favorite turkey burger, marinaded chicken, or dip them in mustard, vinaigrette, or Greek yogurt. 

Every Sunday I make a huge batch that lasts all week - about 2 large sweet potatoes (or 3 medium-sized) and 2 medium zucchini. 

Slice into thin coins, and pre-heat the oven to 375 degrees. 

Cover a large baking sheet with aluminum foil, and lightly drizzle Extra Virgin Olive Oil. Evenly spread your veggie chips out so that they barely overlap- I sometimes have to use 2 large baking sheets. 

Sprinkle 1 tablespoon rosemary and 2 tablespoons of garlic evenly over vegetables. 

Place in oven for 20-25 minutes, depending on how crispy you like your chips.

Remove, and allow to cool. Serve plain, or with 1/4 cup of plain Greek yogurt as a tasty, protein-packed dip!
