Very Veggie Turkey Burgers

Turkey burgers are a great way to portion out your protein for a few meals. I have enjoyed making them for over a year now as an easy to prep lunch for work and a great meal at get together's for the health and taste conscious. 

If you have some spaghetti squash, they work great as a complete meal with a side, as well.

Using 2 cups of shredded carrots, 1 cup of chopped mushroom, 1 whole medium-sized zucchini shredded with a grater, and 1/4 sweet onion finely chopped, mix in a large bowl with 2 pounds of lean ground turkey meat. 

Add in 1 tablespoon minced garlic, 2 teaspoons basil, and 1 teaspoon of ground black pepper. 

Mix with hands until ingredients are distributed evenly. 

Lay out aluminum foil on a large baking sheet, and make palm-sized turkey patties about 2-3 inches in diameter. Spread them out on pan about 1 inch apart. One sheet will make about 6 patties, so you will probably need to use 2 separate baking sheets. 

Set your own to BROIL on HIGH. Place the cooking rack on the topmost setting, and place your turkey patties (on top of baking sheet, of course!) on the rack. Set your timer for 7 minutes. 


Remove, then carefully flip each patty over. Place back in the oven on the top rack for an additional 7 minutes. This will ensure your turkey burgers are completely cooked all the way through. 

Remove from heat, and allow to cool. Serve warm with a side of veggies, or on a whole wheat bun with your favorite toppings.
