Coconut Curry Chicken

I think we have found a new favorite way to eat chicken. 

I tried this recipe the other night, and I'm a little embarrassed, but I may have almost eaten all of it. 
This recipe calls for baking chicken in one large batch. If you prefer using a slow cooker for curry chicken, check out this recipe here.

Begin by chopping up one pound of lean chicken breast into cubes about one inch in diameters, and marinade them in a medium sized cooking bowl of:  1 cup fat free, reduced sodium chicken broth, 1 tablespoon curry powder, 1 cup coconut milk and (optional) 1 small can of diced tomatoes. 

Stir marinade mixture well, and be sure to saturate chicken completely. Cover and place in fridge for 1-2 hours. 

Pre-Heat oven to 350 degrees. 

About 15 minutes before you're ready to bake chicken, chop up and wash 1 cup of pea pods, and cook as you desire (you can boil, eat raw or saute in olive oil for 10 minutes on medium heat). I sauteed pea pods with scallions and garlic. 

If you want a carb, I used Jasmine rice as you can see in the picture, but mashed sweet potato or butternut squash works just as well. 

Remove marinaded chicken from fridge, and place them evenly on a baking sheet covered in aluminum foil. Place chicken in oven for 30 minutes. (If you use more than one pound, the rule of thumb is to bake at 350* for 30 minutes for each pound of chicken.)
