Creamy Crock Pot Chicken

I wish I could take credit for this one - but it is not my recipe. I wanted to still share the love, however! I followed this girl's recipe I found on Pinterest and only changed a few things.

To get the original recipe - check out here at River North Paleo Girl. It is a Paleo recipe, which makes it fall nicely into the clean eating category, as well!

Oops! I forgot to show the Chicken Broth - make sure to add that in, too!

The only variations I did to this recipe were I added in spinach and mushroom, LOTS of garlic, and an entire jar of my favorite tomato sauce. I also made my coconut milk reduced fat, whereas she advises using whole fat. It still came out fantastic, in my opinion, and I made enough for the entire work week to have for lunch.

My only regret - I only added 4 chicken breasts, and I wish I had used 6 or 7. This came out way too soupy like, and not enough chicken. The flavor is awesome, though- the creamy coconut milk with tomato sauce, spices and vegetables tasted great together.
