Simple Garlic Peanut Thai Sauce

In the effort of keeping healthy food tasty, I got inspired on Pinterest (where else? ) to make a simple and easy peanut Thai sauce that used only the best ingredients.


I discovered a few other, more complicated recipes that were healthy/vegan/clean - but, when I was making this, understand that I was:

A) VERY hungry (I had an early lunch) and,

B) craving something fast food like.


I was in no mood to cook for longer than 5 minutes.  I luckily had spaghetti squash cooked up to use as my noodles. Small victory me for right there.


This is where I got creative. I wanted a peanut/garlic/soy sauce flavor that wouldn't take much effort on my part,
and this is what I came up with:




As you can see, the ingredient list isn't too complex.

In a small bowl, whisk together ( I use the term "whisk" lightly -I actually used a fork) a dash of Coconut or Almond milk, 2 tablespoons of Natural Peanut Butter (I LOVE chunky PB!), 2 tablespoons of Bragg's Liquid Amino's (a low sodium soy protein) and 1 teaspoon garlic powder.

Mix until well combined. Add a handful of unsalted peanuts (cashews or almonds would work just as well), and a few shakes or sesame seeds.

Meanwhile, steam your favorite Chinese veggies - I chose from a frozen Oriental mix I have that includes shredded carrots, water chestnuts, broccoli florets, onion, red pepper, and pea pods.  

Remove veggies from heat, and layer over 2 cups of spaghetti squash (or any other noodle substitute - the zero calorie Shiritaki noodles would work well here, too!)


Pour your Peanut Garlic sauce over food, and enjoy your healthy, but "tastes-so-bad-this-can't-be-healthy" dinner.
