Roasted Balsamic Asparagus

There are quite a few recipes floating around on the internet of how to make roasted asparagus - I checked quite a few out, then developed my own recipe for my own taste preference. I hope you like it as well- modify as you desire!

Asparagus is a GREAT vegetable- it's well known for its diuretic affects (think cleansing), and tastes awesome raw or cooked. If you want to try a different way of eating this excellent spring-time food, try roasting it in your oven. The prep only takes 5-10 minutes, and in a little under 20 minutes, you've got a great, healthy snack or side for dinner tonight. 

I bought two bunches of asparagus, and laid them out side by side on a large baking sheet covered in aluminum- I'm a big believer in easy clean up.

Next, while your oven is preheating to 400 degrees, drizzle your favorite Extra Virgin Olive Oil over the stalks evenly - don't drench them, but a light coating will do. 

Next, sprinkle 2 tablespoons of minced garlic evenly over asparagus. Lastly, take about 1/2 bottle of balsamic vinaigrette and pour over asparagus. I don't know if you can tell from the pictures, but i did drench my stalks in vinaigrette - this is what really adds  the delicious favor, so use your own discretion. 

Finally - if you wish, sprinkle shredded Parmesan cheese - otherwise, leave naked. I waited until cooked, then sprinkle 4 ounces of fat free feta over asparagus- you don't want to cook feta, trust me. 

Bake asparagus for 20 minutes. Remember to keep an eye on them for the last 3 minutes- they can overcook, and become very thin and crispy if left in too long.
