Clean Eggplant Lasagna

This is what I made for dinner a few nights ago - I wanted something "Italian style," but know that eating pasta isn't always my best friend. This recipe is super easy and quick to make. You really can't get this one wrong.

If you are looking for other healthy Italian dishes - try out Kickstart's popular Italian Crockpot Chicken or this simple Panzanella Salad with pita chips.

I pre-heated the oven to 350 degrees, and prepped a Pyrex Dish by spraying all over with EVOO (Extra Virgin Olive Oil) .

Next, I layered the bottom with large slices of Eggplant.

Next, I layered sliced coins of zucchini and yellow squash, then poured on my favorite Organic Tomato Sauce. I f I had mushrooms, I would have added them too!


And, of course, a layer of my Italian seasonings - garlic, onion powder, oregano and basil. I then sprinkled on a little more EVOO to soak into the eggplant.







 I continued for another layer of Eggplant - Sauce - and Zucchini/Squash. Poured over the rest of the tomato sauce, and did another layer of Italian seasonings - garlic, onion, oregano, and basil.

Stick this meal in the oven, covered with aluminum foil, for 30 minutes on 350 degrees. Serve warm, and enjoy!

Side note - You could definitely add in cheese here, I just chose not to. Mozzarella and/or Parmesan would be amazing on this dish. If you avoid dairy products, there is a great brand called Go Veggie!  that is dairy free and vegan. I personally use their shredded cheese on my veggie crust pizzas and portabella pizzas, too.
