Clean Chicken Salad

It is officially my favorite time of year- Summer time - and that means time for day trips to the lake, beach or mountains. And while the occasional trail mix and fruit works great for healthy energy to fuel my body, I like to have an easy grab-and-go meal that has protein to keep me full, and healthy fats. 

 


To start, simply have 1 pound of lean chicken breast (or tenders, as pictured above) fully cooked. I have been using my George Foreman Grill for the last 3 years now, and love it. Once cooked, allow to cool, and chop into 1 inch sized cubes.

Put chicken aside, and hollow out 1 ripe avocado (you know they're ripe when the rind is a dark color, and soft to the touch. If avocados are hard at the grocery store, simply put them out on the counter for a day or so to ripen quickly.) 

Mash avocado in a small bowl, and add in 1 tablespoon of garlic powder, and 1 teaspoon of ground black pepper. 

Next, wash and slice 1-2 cups of red grapes into halves.  Mix grapes in a large salad bowl of your favorite salad greens - spinach, iceberg, romaine, whatever!

Finally mix your lettuce greens and grapes in with your mashed avocado and chicken. 

Eat as is, or put into a whole wheat or multi-grain wrap and Enjoy your Healthy Chicken Salad -  at home, or on-the-go!
