Kohlrabi Fries!

I think we just hit the mother load here. 

Until last week, I had NEVER heard of the vegetable Kohlrabi. Have you? 

Here's a little low down on this tasty veggie: 
Only 36 calories for 1 cup.
It is a cruciferous- meaning, it's in the same plant family as broccoli, cabbage, cauliflower and brussel sprouts. These are the BEST vegetables to eat when trying to lose stubborn body fat. 
It's Glycemic Load is only a 3
(out of 100)- which means, great for fiber and lean muscle growth!
 It's high in Calcium and Magnesium - both essential for female nutrients and alleviating PMS symptoms. 

And, perhaps the most important fact about Kohlrabi: 

It tastes just like FRENCH FRIES when you cook them.  

Mind Blown. 

So, you in? 

Head on over to your produce department or local farmer's market and pick up 2-3 bunches of this sweet vegetable. 

Wash first, remove the stems and leaves, and set aside- I chose to put them in my compost pile, but you can definitely saute or boil them for a tasty kale-like treat. 

Next, slice up the Kohlrabi into slices about 2-3 inches long (shown above) and 1/4 inch in thickness. 

Prepare a baking sheet with aluminum foil, and pre-heat your oven to 400 degrees. 

Next, in a large mixing bowl, mix your fries with 2-3 tablespoons of Extra Virgin Olive Oil and 2 teaspoons of ground black pepper. I also like to add 2-3 tablespoons of Garlic and Italian Seasonings, but use your own discretion. If you don't know me yet, I kind of have a garlic addiction. 
Finally, lay your saturated fries evenly on the baking sheet and cook on 400 degrees for 20 minutes. Remove, and flip fries over. Place in oven for an additional 20 minutes, or until crispy to your preference. 

Serve warm with ketchup, or eat them plain. 
I must confess I may have eaten the entire plate in one sitting. It was delicious. 

You may want to serve with your favorite Turkey Burger recipe, or with my Clean Chicken Tenders
