Burrito Saute

I have had the BIGGEST craving lately for burritos.

Like, for the last 3 weeks. Seriously.
Something had to be done. 

The obvious answer, I'm sure to most of you, is to go out and just buy a DANG BURRITO. But, I can't do that. I have to make it myself. And it has to be gluten free and lactose free. Because I am the pickiest clean eater you'll ever meet. 
I know, I'm weird. 

To make your own clean eating, gluten free, burrito-inspired awesomeness.... try this recipe out!

Begin with sauteing in a large wok or frying pan 1.5 cups of fat free,reduced sodium chicken broth. Mix in 1 tablespoon of minced garlic and 1/4 yellow onion. Bring heat to medium-high. 

Slowly stir in 1 whole yellow or orange pepper - your preference. Next, add in 1 medium sized sweet potato or yam, chopped into chunks no thicker then 1/2 inch. 

Continue stirring for 5-7 minutes, allowing sweet potato to soften. Next, mix in 1 medium zucchini, chopped (optional, but I had a fresh one from my garden, so I threw it in); Along with 1 can of 14 oz. reduced sodium, rinsed black beans and 2 cans of 14.5 oz. diced tomatoes (or mix in your own fresh tomatoes if you have them!)

Sprinkle 1 teaspoon of garlic powder, 1 teaspoon of cumin,  teaspoon of cinnamon, and a dash of chili powder.

Stir often on medium-high heat for 10 minutes. 

Reduce heat to simmer, cover, and allow to set for an additional 10-15 minutes. 

Dish is ready when sweet potato can be pierced easily with a fork. Serve warm as is, or over a bed of brown rice.
