Best Ever Butternut Squash Soup

No, but really. This is probably one of the best fall/winter soup recipes I've ever made. 

Begin with washing off 2 medium-sized leeks, and slicing off the bottom about 1/2 an inch. Peel them carefully by pulling the outer green leaves off. Once you get to the core, which will be as thin as your thumb, wash the stalks again. Slice the stalks about 1/4 inch thick each. Place the rings into a medium-sized pot, and soak them in water. Begin to separate them with your fingers into individual pieces. 

I know this seems like a lot of work- but leeks make this taste SO YUMMY and need to be thoroughly cleaned and chopped. The work will be worth it in the end, I promise :) 

Next, take a medium to large sized butternut squash, and peel the outer skin. Chop into 1 inch cubes. Discard the seeds. 

You will now need 3 medium-sized potatoes - your choice of Russet, Yukon, or Red. Peel each tuber (like that word ?), and dice into 1/2 inch cubes. 

On the stove top, warm 1 tablespoon of EVOO on medium-high heat. Stir the potatoes and squash for 3-5 minutes to soften the veggies. Now you can add in your leeks and saute them for an additional 5 minutes. Stir in 4 cups of fat free, reduced sodium chicken broth with 2 cloves of minced garlic. Bring to a boil. 

Turn heat to medium-low, cover, and allow to simmer for 20 minutes. 

Now here's where we get a little fancy-pants: 
Take half of your veggie medley, and pour in a blender. Puree your veggies for about a minute or two until it turns into a soupy consistency. Repeat this step with the remainder of your veggies. 

Now, it looks like soup, right? 

Season to taste and enjoy warm :)
