Clean Black Bean Soup

I can't believe October is already almost over! It has FLOWN by, and I have been whipping up healthy/clean soups for the chillier weather left and right!

If you missed them - check out my favorite - Best Ever Butternut Squash Soup or Hearty Chicken and Turnip Stew (don't shy away from the Turnip - it actually tastes pretty great) - or my cousin's favorite, Shredded Chicken Chili

They're all pretty awesome- and I am in the process of turning out even more, so stay tuned!

Most of these soupy/stewey recipes require a slow cooker - if you don't have one, or are in the market for a new one, check out this one that I 've been using for the last 5 years or so. 

Ok- if you're ready to try out a fantastic black bean recipe, that's for the clean eater or healthy-ista in you - (yes, I am making words up in this post... I don't care :) - 

Begin with setting your slow cooker to LOW and pouring in 4 cups of reduced sodium, fat free chicken broth, 1.5 cups of water, 2 cups of rinsed or dried black beans (if you use dry beans, make sure you pre-soak them overnight. Trust me on this one. You'll regret it) , and 1/2 yellow chopped onion. Optional: Add in one packet of Stevia and/or 1 teaspoon of ground red pepper. 

Cover, and cook on LOW for 8 hours, or HIGH for 4 hours. 

When there is only 30 minutes left: Stir in 2 cups of diced tomatoes, 2 teaspoons of EVOO, and 1 teaspoon of cumin. Cover again, and cook for the last 30 minutes.
