Shredded Chicken Chili

My cousin Rachel has done it again! 

One of my favorite clients, best friend, and family member - Miss Rachel - has yet again made me an AMAZING clean recipe. While I may have introduced this lady to the world of kickboxing and weight training, Rachel is an amazing chef and has introduced me to some fantastic healthy new recipes!

If you missed it, she was the source for the AWESOME Kohlrabi Fries from a few posts ago. They're basically vegetable french fries that look and taste like the REAL thing.

 Needless to say, I ate the whole plate. 

Anyways, Rachel and I had planned a girls night since she's been home from backpacking Europe for the last 3 weeks. When I came over, she had an amazing dinner simmering in the slow cooker - Shredded Chicken Chili!

Begin by setting slow cooker on LOW and placing 1 pound of lean chicken breasts on the bottom. 

Next, pour on rinsed black beans (16 ounces), rinsed kidney beans (16 ounces), and 8 ounces of Organic tomato sauce with 2 cans of Organic diced tomatoes (14.5 ounces). (You can optionally add in a 10 ounce bag of frozen corn.) 

Stir in 1/2 sweet onion, chopped. Next, sprinkle 1 tbsp of cumin, 1 tbsp chili powder, 1 tbsp garlic, and ground black pepper to taste. 

Cover, and cook on LOW for 10 hours (or HIGH for 6). 

When there's 30 minutes left, remove chicken breasts and shred with a fork. Place back in slow cooker for remaining half hour.
