Breakfast Pumpkin Muffins

Pumpkin has been all the rage on Pinterest lately. And, to be honest, this is my VERY first pumpkin recipe. I am honestly not a huge fan. I must confess I have never tried a pumpkin spice latte, pumpkin muffin at Dunkin Donuts, or even cared for pumpkin pie. 

I know, I know - traitor. 

But it seems since September when Starbucks releases their famous pumpkin spice lattes, the internet explodes with pumpkin-tasting everything. Well, I can now be part of the bandwagon. Figures it's almost Christmas, and I am just now attempting something pumpkin flavored, right? 

Thanksgiving morning I finally broke and opened up a can of pumpkin puree to make these delicious, clean breakfast muffins. I added chocolate chips on the top- which is optional - but if you know me by now, chocolate is kind of my favorite thing. Besides eating. 

Begin with a large mixing bowl and your oven set to 350 degrees. In the large bowl, mix 2 cups of dry cooking oats with 2 ripe bananas, 1 large can of pumpkin puree, 1/2 cup of almond milk (or whatever your favorite milk product is!), 1/3 cup of pure honey (or 3 packets of stevia), and 1/4 cup of liquid egg whites (or 1 whole large egg.) 

Next, add a dash of cinnamon. 

Make golfball-sized muffins, and place each inside a muffin baking tray. Be sure to spray lightly with extra virgin olive oil or use cupcake tins like I did (note the Happy Birthday balloons on them. Hello clearance aisle.) 

Place in oven on middle rack for 25 minutes. Eat as they are, or add chocolate chips on top. You can also serve these with a serving of cottage cheese on the side, tastes amazing!

This recipe makes about 20 small muffins, or 10 large ones.
