Clean Sweet Chicken Chili

Here is my favorite lunchtime meal for the workweek - easy prep, easy cooking, and makes enough healthy meals for the whole week. 

If you are like me and don't have tons of time to cook elaborate, healthy meals- slow cookers are a girl's best friend. Plus, those things last forever - I have had mine for almost 3 years now, with a heavy use of 2-3 meals a week, and it has been going strong. You definitely get your money's worth in the time and effort they save you. 

To begin, set your slow cooker for HIGH (4 hour cook time) or LOW (8 hour cook time) and place 1 pound of fat free, lean chicken breasts on the bottom. Cover with 1 cup of fat free, reduced sodium chicken broth. 

Next, add 1-2 tablespoons of minced garlic and 2 cans of organic tomato sauce and 1 large can of organic diced tomatoes. Sprinkle 1 teaspoon black pepper, 1 teaspoon basil, 1 teaspoon oregano, and 2 teaspoons of chili powder. Stir in 2-3 packets of Stevia in the Raw

Pour 1 cup of rinsed black beans and 1 cup of rinsed pinto beans (dry beans work if you prefer, jut before to rinse them overnight beforehand.) 

Layer with 2 sweet potatoes - cubed (I leave the skin on- but this is up to you) and 1 cup of sliced mushrooms. 

Cover and set. Enjoy warm :)

What is a good substitute for chicken broth? i can't have any MSG.Thanks :)

Hi - Chicken Broth doesn't have any MSG in it. If you're worried about sodium, water and some minced garlic works fine as a replacement. if you're trying to avoid chicken or meat products, vegetable broth is an excellent substitute.
