Chicken and Rice Noodle Soup

Brrrr - it has been freezing lately! Nothing like these near sub-zero temperatures to make me crave warm, feel-good chicken noodle soup. Try out this clean eating version on chicken noodle soup - it's gluten friendly, with using brown rice noodles as a substitute. Hopefully it will warm you up as much as it did for me!

Heat ½ sliced onion and 1 tbsp minced garlic to bottom of pot and cook until golden with 1/2 tbsp extra virgin olive oil. Add 4 cups low sodium, fat free chicken broth over medium high heat. Bring to boil, and stir in 3-4 cups of cooked brown rice noodles (follow package instructions.)

In a separate pan, prepare 1 pound fat free chicken breast and sauté in ½ cup low sodium, fat free chicken broth until center is no longer pink. Next, add 2 cups of fresh mushrooms, 4 cups of raw spinach, and 2 cups of bean sprouts. Reduce heat to Low, and cook until mushrooms and sprouts become soft. Next, stir in 2 bunches of chopped scallion, 2 tbsp of cilantro, 2 tbsp of Bragg’s Amino’s (or any other low sodium soy sauce), and 1 teaspoon of red pepper flakes. Keep heat on low, stirring for an additional 5-10 minutes.

Finally, add the meat mixture to your pot of brown rice noodles and chicken broth. Stir together, until well incorporated. Serve warm and Enjoy!
