Clean Eating Crepes

Sometimes a girl needs a pastry. 

And this recipe is just what I need to get my "fresh out of the bakery" treat. Paired with a cup of coffee, this makes a great meal - for dessert, snack, or breakfast. 

This recipe makes a little more than 2 crepes 
(see picture above.)

Begin by lightly spray a frying pan with Extra Virgin Olive Oil and set on medium heat. In a mixing bowl, combine 1/4 cup of almond flour with 1/2 cup of eggwhites and 1 teaspoon each of baking powder and vanilla extract. Add 1/4 cup of Almond Milk .Whisk well until flour no longer clumps. 

Next, lay out a thin layer of your mixture on the frying pan, and allow to cook for 5-6 minutes. Once one side is done, flip over carefully (these should be about 1/8 of an inch thin- so they can break easily!). Remove from heat, and make your second crepe in the same way. 

Lay your crepe on a plate to cool, and fill the center with 1/4 cup of fat free cottage cheese and 1/4 cup of fresh berries (I sometimes us 1 tbsp of sugar free fruit jam if I'm out of fruit). Close and sprinkle with ground cinnamon.
