Clean Eating Burrito Bowls









**This recipe is gluten and dairy free!

Begin with preparing 1 pound of lean, fat free chicken breast cut into 1 inch cubes. Cover in a light coating of Extra Virgin Olive Oil and 1-2 tablespoons of salt-free fiesta seasoning. Bake in oven on aluminum foil covered pan at 375 degrees for 30 minutes. 

While chicken is baking, prepare 1 cup of dry brown rice according to package directions. During the last 10 minutes of rice boiling (will be about 40 minutes) - mix in 1 can of 15 ounces black beans, rinsed, and 1 can of 15 ounces red beans, rinsed. Stir in 1 can of 15 ounces diced tomatoes. Stir well with wooden spoon on LOW heat for 5 minutes (or until entire rice-bean mixture is warm.) 

Meanwhile, peel and mash up 1 whole, ripe avocado. Set aside. 

Finally, add your baked chicken to the rice-bean mix and allow to cook, turning heat off. 

Serve in individual bowls, and cover with mashed avocado and optional dairy-free cheese (I love the Go-Veggie brand of shredded cheese you can check out here). 

Optional: You can always wrap your burrito bowl in a wrap and serve as a traditional burrito.
