Clean Eating Falafel

*This recipe is Gluten Free

A few weeks ago I was in Newport, Rhode Island (GORGEOUS city - worth traveling to if you've never been!), and was looking for a light lunch that was healthy and inexpensive. Being healthy and a clean eater while traveling can soon become a pain in the butt in our modern society. Planning ahead is critical, but sometimes you run out of almonds and veggies. 

Luckily, we found a little middle eastern cafe that was packed with people. For about five bucks, I was able to get an amazingly tasty falafel salad - complete with homemade hummus ( which was aweomse) and a light tahini dipping sauce. It had me craving more. Unfortunately, I soon realized that Manchester, New Hampshire is slacking in the middle eastern food department. 

After trying a few "boxed" versions of "make it yourself" falafels - which made my stomach VERY upset (they claimed gluten free, but I call their bluff) -  I decided to create my own homemade, clean falafels. Try it out for yourself - I think you'll really like this one: 

Begin by preheating oven to 350 degrees. Lightly spray a Pyrex dish with Extra Virgin Olive Oil

Meanwhile, mash 2 cans of rinsed 15 ounces chick peas (or 2 cups dry, pre-soaked) by hand or in a food processor. Place in a medium sized bowl, and mix with a wooden spoon with 1/2 yellow onion, chopped, 3 tbsp of chopped fresh parsley, 2 tbsp oat flour and 2 cloves of minced garlic.

Next, stir in the following seasonings: 1 teaspoon coriander, 1 teaspoon cumin, and a dash of ground black pepper. 

Once your mixture is like a thick paste, and oven is preheated, shape your mixture into small, golf sized balls and distribute evenly on Pyrex dish. 

Place in oven for 10 minutes. Carefully turn each falafel over, and bake an additional 5-10 minutes. 

Serve over salad greens with hummus as a side, or inside a pita pocket as a sandwich. Add Tahini sauce for flavor.
