Peanut Butter Chicken Stir Fry

This is SO perfect. 

Always trying to find ways to make chicken and vegetables interesting can be a pain. This recipe combines clean eating with lots of taste. If you love peanut butter, you have to try this recipe out!


Begin with marinading 1 pound of lean chicken breast (cut into 1 inch cubes) in a container with 1/2 cup of natural peanut butter, 1/4 cup low sodium soy sauce, 1/2 cup hot water, 1 tablespoon minced garlic and 1 teaspoon ground ginger. Cover and set aside in fridge for 2 hours. 

When you are ready to cook, prepare a large wok with your favorite fresh veggies using my clean eating method of stir frying here

Cook chicken on medium-high in a medium sized pan for 10-15 minutes, or until the center of chicken is no longer pink. 

Serve chicken and veggies together, and Enjoy!
